Ingredients
- 300 g lamb mince
- 1 garlic clove (minced, for koftas)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1 tbsp fresh parsley (finely chopped)
- salt (to taste)
- black pepper (to taste)
- 2 small-medium potatoes (cut into wedges)
- 1 tbsp olive oil (for wedges)
- 1 tsp paprika
- 1 tsp oregano
- plum tomatoes (sliced)
- 1 cucumber (half diced for salad, half grated for tzatziki)
- 1/2 red onion (finely sliced)
- 50 g feta cheese (crumbled)
- 6-8 Kalamata olives
- 1 tsp red wine vinegar
- 1 tsp olive oil (for salad)
- 150 g Greek yogurt
- 1 garlic clove (small, crushed, for tzatziki)
- 1 tsp olive oil (for tzatziki)
- 1 tsp lemon juice
- 1 tbsp fresh mint or dill (chopped)
- 2 wholemeal pitas (warmed)
- 1 lemon (cut into wedges, for serving)
- extra fresh parsley (chopped, for garnish)
Instructions

Mix the lamb mince with minced garlic, cumin, coriander, smoked paprika, parsley, salt and pepper. Form into kofta shapes (around 6-8 skewers or oval patties).

Toss the potato wedges with olive oil, paprika, oregano, salt and pepper. Arrange on a baking tray and cook until golden and crispy.

For the Greek salad, combine sliced tomatoes, half the cucumber (diced), sliced red onion, crumbled feta, olives, red wine vinegar, olive oil, salt and pepper.

For the tzatziki, mix Greek yogurt with the remaining half cucumber (grated), crushed garlic, olive oil, lemon juice, chopped mint or dill, salt and pepper.

Cook the koftas in a hot pan or on a grill until browned and cooked through, about 8-10 minutes.

Warm the pitas. Serve the koftas with wedges, salad, tzatziki, pita, lemon wedges, and extra parsley.
