Instructions

  1. 1

Brown a pound of Italian sausage in a skillet over medium heat.

  2. 2

Add your choice of pizza toppings: chopped onions, chopped green peppers, sliced black olives, and pepperoni. Stir together.

  3. 3

When the sausage is fully cooked, stir in half a cup of pizza sauce.

  4. 4

Season with spicy Italian seasoning, mix well, and taste to adjust.

  5. 5

Lay out tortillas, spread some of the meat mixture and some mozzarella cheese on each, then roll them up tightly.

  6. 6

Place the rolled enchiladas seam-side down in a greased 9x13 baking dish. You should get about 8 enchiladas.

  7. 7

Spread the remaining pizza sauce over the top, then sprinkle on the remaining 8 oz shredded mozzarella cheese.

  8. 8

Top with a bag of mini pepperonis and sprinkle with more Italian seasoning.

  9. 9

Bake at 400°F for 10 to 12 minutes, until hot and bubbly.
