A highly practical and delicious summer side, but you'll have to guess the yield and plan ahead for a mandatory 1-hour chill.
Ingredients
- 4-5 cups cooked pasta of choice
- 3/8 cup red onion (diced)
- 1/2 cup green bell pepper (diced)
- 1/2 cup cherry tomatoes (diced)
- 3/4 cup mini mozzarella balls
- 1/4 cup fresh basil (chopped)
- sliced black olives
- 1 cup uncured pepperonis (sliced in half)
- 1/2 cup olive oil (for dressing)
- 1/4 cup red wine vinegar (for dressing)
- 1 lemon (juiced, for dressing)
- 1/4 cup Parmesan cheese (for dressing)
- salt (to taste, for dressing)
- pepper (to taste, for dressing)
- 3 garlic cloves (minced, for dressing)
- 1 1/2 tsp dried oregano (for dressing)
- 2 tsp Trader Joe's pizza seasoning (plus extra for topping, for dressing)
- 1/4 tsp red chili flakes (for dressing)
Instructions

Cook your pasta according to package, drain, rinse under cold water, and set aside to cool.

To a large bowl add cooled pasta, cherry tomatoes, green bell pepper, olives, basil, mozzarella balls, onions.

Whisk all the ingredients for the dressing, pour over pasta mixture, and mix.

Top with extra basil and pizza seasoning.
