A seriously delicious Mediterranean bowl, but expect it to take closer to 50 minutes and leave you with a sink full of dishes.
Ingredients
- 2 large potatoes
- 2 tbsp olive oil
- salt (to taste)
- pepper (to taste)
- 2 tsp garlic granules
- 1 tsp dried parsley
- 2 tsp smoked paprika
- 225 g halloumi
- baby gem lettuce
- 2 tbsp yoghurt
- 1/2 cucumber
- 1/2 tsp dried mint
- 1 tbsp peri peri sauce
- pickled red onions
Instructions

Cut the potatoes into cubes and boil for 15-20 minutes or until soft.

Drain the potatoes, pop onto a tray, crush with the back of a glass, and drizzle with olive oil.

Season the crushed potatoes with garlic granules, salt, pepper, dried parsley, and smoked paprika, then air-fry for around 20 minutes or until crispy.

Slice the halloumi and pan-fry until golden brown on each side.

Prepare the tzatziki-style dressing by mixing together yoghurt, dried mint, grated cucumber, salt, and pepper.

Slice the lettuce and remaining cucumber. Once the potatoes are cooked, layer everything into a bowl.

Add peri peri sauce and pickled red onions on top.

If using large potatoes, boil longer or check them after 10 minutes in the air-fryer to prevent them turning into mash.

oh NOOO - sorry queen. I used large potatoes cus I had a budget to stick to but but baby potatoes would be pefect! If using big ones again, check on them after 10 mins! Mine took a while for some reason! XX
