Ingredients
- 1 lb Ground beef
- 1 small Onion (diced)
- 1/2 tbsp Chili powder
- 1/2 tsp Paprika
- 1/2 tsp Cumin
- 1/2 tsp Garlic powder
- 1/4 tsp Oregano
- 1/4 tsp Cayenne (optional)
- 1/8 tsp Cinnamon
- Salt and pepper (to taste)
- 3/8 cup Water
- 2 tbsp Ketchup or tomato paste
- Shredded cheese
- Corn or flour tortillas
- 1 can (15oz) Canned corn (drained)
- 1 Jalapeño (seeded and diced)
- 1/4 cup Mayonnaise
- 1/4 cup Sour cream
- 1/4 cup Fresh cilantro (chopped)
- 1 tbsp Lime juice
- 1/2 cup Mozzarella (shredded)
- 1/2 tsp Chili powder
- 1/2 tsp Garlic powder
- 1/2 tsp Cumin
- 1/4 tsp Cinnamon
- Salt and pepper (to taste)

Mix your Mexican street corn: in a medium size bowl combine drained corn, diced jalapeño, mayo, sour cream, chopped cilantro, lime juice, shredded mozzarella, chili powder, garlic powder, cumin, cinnamon, and salt and pepper to taste. Set in the fridge until ready to use.

In a skillet over medium heat, add the ground beef and diced onion. Break apart into smaller pieces and cook until browned and cooked through.

Add the chili powder, paprika, cumin, garlic powder, oregano, cayenne (if using), cinnamon, salt and pepper, water, and ketchup or tomato paste. Bring to a boil, then reduce heat and simmer for 5-7 minutes.

While the beef is simmering, fry the tortillas: add about 1 tbsp of oil to a skillet over medium heat and fry each tortilla on both sides until golden and a little crispy.

Assemble the tacos: place some shredded cheese on each tortilla, then add the meat, and top with the Mexican street corn dip. Enjoy!
